Having spent his career cooking at some of the greatest restaurants in the world, in London, New York, Stockholm and Rome, Stuart’s career then took him from roles as Chef director and creative leader, to the ultimate leading role in business as Global CEO of the Gordon Ramsay restaurant group for 8 years. Deciding then to create his own restaurant group with his French wife Cecilia and their 4 sons, he has taken up the role of chef Director again, with new found expertise and experience to open and lead the restaurants through the modern evolution of hospitality, 2.0.

I have fabulous memories over the past 20 years, working on some incredible charity events ranging from culinary spectacles at Raffles hotel in Singapore with Alain Ducasse, the brothers Poucel and Tetsuya Wakuda, to the Charlie trotter foundation in Chicago with Ferran Adrian, Daniel Boloud and Marcus Samuelson. Created as an extension of our restaurants in Kent we are now catering more outside events and parties at home and at celebrated locations."

On 6 November 2025, Stuart reunited with Tom Anglesea, Executive Chef at Dovetale for the first time in 20 years.

Host your next event at our beautiful upstairs room at Bank House Chislehurst, with its own designated bar and sun terrace, with offerings to suit all discerning and diverse needs. You will have exclusive use of our first floor, with access to private bar and an outdoor terrace/smoking area. Our venue can host up to 45 people for a sit-down meal, or 55 standing. Full takeover of the whole restaurant is also available. Our events team is on hand to help with all your requests and manage your event for you.
